FIVE POINT FRIDAY

I made this recipe for a New Year's appetizer, but then when I found out that a serving doesn't have any points...well then it became a great snack too. Enjoy!






Tomato Bruschetta
0 points per 1/2 c. serving








2 Tbsp. grated Parmesan Cheese
2 tsp ground basil
1/4 tsp. salt
1 tsp. ground pepper
1/2 tsp. olive oil
1 garlic clove, minced
1 small zucchini, chopped
2 c. tomatoes, chopped
2 tsp. balsalmic vinegar
1 small onion, chopped

Combine all ingredients and mix gently. Scoop mixture over bread, crackers, other veggies, etc. The only points will come from what you put the the tomatoe mixture on. This is a great way to get in some veggies.
